Japanese Saga Wagyu beef 

Square One has offered the charcoal- grilled Japanese signature Saga wagyu beef, cut to order and cooked to your liking.

From the Kyushu region of Japan, the Saga beef is known for its impressive quality, and continuously ranks highly in wagyu beef competitions. 

Saga beef cattle are raised using expert breeding techniques in the rich natural environs of Saga Prefecture. The calm climate, beautiful water and clean air form ideal conditions for cattle rearing

The meat is distinguished by a beautiful fine-grained marbling known as tsuya-sashi, or glossy marbling. The sweet rich taste of Saga beef has a scent of coconut once it is cooked and is enjoyed worldwide.

At Square One this month, the Saga beef- steak is served with salad garnish and your choice of our signature sauces, including back pepper, béarnaise, mushroom, chimichurri, and café de Paris butter. 

Do not forget a sip of Torbreck, Old Vines 2012 Grenache, Shiraz, Mourvedre, Barossa Valley, Australia to complete a delightful dinner.

Chef Matteo Fracalossi at Opera will take you to his hometown in Trentino Alto Adige this June to experience some very authentic Italian cuisine. 

Located in Draped across the high Alps where Italy, Austria and Switzerland collide, Trentino Alto Adige, Italy’s northernmost region is a major draw for holiday-makers who mostly come for winter skiing, summer hiking and tranquil year-round tranquil vistas.

During the month of June, Chef Matteo will present the true taste of Trentino Alto Adige with a special four-course dinner menu. 

The culinary journey starts with came salada and traditional cured beef, beans, onions, and Trentino grana foam. 

Then, you will be invited to savor the authentic dishes of Trentino with aged speck and apple risotto. Meat lovers should not miss the white wine braised pork shank, served with grilled polenta, cabbage and milk. 

The dinner will end well with deconstructed apple strudel. Do not forget to treat yourself to a sip of Torbreck, Old Vines 2012, Grenache, Shiraz, Mourvedre, Barossa Valley from Australia.
