Park Hyatt Saigon welcomes new chef de cuisine

Park Hyatt Saigon welcomed chef Matteo Fracolossi - its latest chef de cuisine last Friday.


As the new chef de cuisine at Opera, Chef Matteo and his team will take guests on an extraordinary journey to discover the true taste of Italy. 

Each month, guests’ palates will travel to a beautiful region and try its signature flavours presented by Chef Matteo and his team.

From Trento in Northern Italy, Chef Matteo had his first experience in the kitchen in 1996 and has spent nearly 20 years indulging in his passion for cooking. 

He trained and improved himself by working at Villa Crespi, a two Michelin-star restaurant under the leadership of the famous chef Antonino Cannavacciuolo. 

Five years in this celebrated kitchen equipped Chef Matteo with the necessary skills and experience to move on to the next step of his career. 

Chef Matteo then moved to several five-star restaurants in Rome, Venice, Milano, Moscow and Doha where he had the chance to constantly innovate and challenge himself.  

“Moving to Ho Chi Minh City is great.  I am so happy to have an opportunity to work in Vietnam and believe that this is going to be a wonderful chapter in my life,” Chef Matteo said.
